Elephant is the singular and elephant is the plural.
That is what I have been taught. I know my teacher and I thoroughly trust her.

I've been speaking English as my native language for over 20 years. Trust a native over any teacher, unless that teacher is a native speaker as well.

"Elephants" is the plural form.

Examples of some words that are both singular and plural:

Deer
Moose
Folk and Folks are both plural forms.
Series
Hair (often used as a plural form. Singular: a strand of hair)

I also know many variations of English, Midwestern American English and Common British English are the most correct.

OT: I've not checked the Oxford English Dictionary on that one, but the dictionaries that I have checked to no list "elephant" as a plural form, not even in archaic dialect. Which dictionary are you using?

Would you consider it to truly be an addiction if you could name and identify every animal that appeared in the opening sequence of The Lion King?
